In a January 2005 report, the Centers for Disease Control and Prevention (CDC) estimated that 76 million cases of food poisoning were diagnosed in the U.S. each year, which resulted in 325,000 hospitalizations and 5,000 deaths.

The CDC report noted that those at increased risk to become seriously ill as a result of eating contaminated foods are infants, the elderly, those already sick because of serious medical conditions or weakened immune systems and women who are either pregnant or breastfeeding.

Despite the many safeguards in place to protect the country’s food supplies, food can become contaminated in a number of ways:

  • In commercial factories, where food can become tainted during processing (such as canned or jarred soups, sauces, fruits and vegetables), or if a factory received supplies of raw ingredients that were contaminated.
  • Tainted fresh produce (such as lettuce, green onions or tomatoes) sent to restaurants or supermarkets.
  • Distributors and processors of fresh meat, poultry and seafood, who package products that came from animals previously unknown to infected or carriers of food-borne illnesses.
  • When restaurant employees and even home cooks do not follow hygiene rules (such as washing hands and thoroughly cleaning knives and cutting boards used for raw meat or poultry, food-borne bacteria can spread to other foods.
  • Improperly storing or failing to promptly refrigerate foods can also cause bacteria to develop and cause food borne illnesses.
